Job Description
Responsibilities and essential job functions include but are not limited to the following: Willingness to learn how to make homemade pastas and bread, on a daily basis. Interested in learning how to cook with wood fire grills and ovens. Interested in performing whole animal butchery techniques. Accurately and efficiently prepare the highest quality cuisine for our guests, complying with our standard portion sizes, cooking methods, quality standards, and kitchen policies and procedures. Assume 100% responsibility for the quality of products served. Adhere to all DHEC regulations for cleanliness and sanitation. Stock and maintain sufficient levels of food products at line stations to ensure smooth service. Maintain a clean and sanitary work station, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment. Prepare items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or maintaining. Follow proper plate presentation and garnish setup for all dishes. Assist in food prep during off-peak periods as needed. Close the kitchen properly, following the closing checklist, and assist others in closing. Attend all scheduled employee meetings and contribute suggestions for improvement. Follow presentation and garnish standards. Assist in food prep during off-peak times. Properly close the kitchen following procedures. Participate in meetings and suggest improvements. Required Knowledge, Skills & Abilities: Minimum 2 years’ experience in kitchen prep and line cooking. Basic professional cooking and knife skills. Knowledge of food costs. Understanding of kitchen safety, sanitation, and food handling. Availability to work nights, weekends, and holidays. Ability to read and understand cooking directions. Clear communication with team members. Physical Requirements: Constant standing and walking. Occasional exposure to cold, heat, and water. Occasional stooping, kneeling, or crawling. Occasional lifting up to 50 lbs. Occasional use of ladders, stairs, and ramps. Frequent wrist, spine, and kitchen work movements. Constant oral communication and idea exchange.
