Job Description
Duties: Prepare and hand-stretch pizza dough according to traditional Neapolitan methods Operate and maintain woodfired pizza ovens at correct temperature levels Manage fermentation and proofing processes to ensure consistent dough quality Prepare toppings, sauces, and other ingredients to high standards of freshness and hygiene Assemble and bake pizzas with accuracy and attention to detail Monitor cooking times to deliver pizzas quickly without compromising quality Maintain cleanliness and organisation in the kitchen at all times Follow food safety and hygiene regulations Support kitchen team with prep work and assist during busy service periods. Requirements: 24 years proven experience making Neapolitan pizza Skilled in hand-stretching dough (no rolling pins) Experience in dough preparation, shaping, topping, and firing Confident in managing oven temperature and timing Strong knowledge of fermentation, hydration, and flour types Ability to work cleanly, quickly, and calmly under pressure Willing to work shifts, including evenings and weekends Traceable references essential.
