Head Chef. 5* Game Lodge Madikwe Game Reserve North Western Province. - Leads a small kitchen team - 5-star level Multiple dining venues: indoor dining room, outdoor dining on decks, boma dinners around a fireplace, courtyard dinners, private dinners on your chalet deck. The Boma Dinner is a special highlight — outdoor, around fire, often with a “braai” (barbecue) style set up. South African Cuisine - with luxury gourmet twist - special dietary requirements - Presents and introduces new meal ideas - Responsible for food & beverage management - purchasing, hygiene, stock management - Optimal use of food stocks (compliance with budget targets) - Responsible for the cleanliness of the kitchen Requirements - At least 5 years of experience as Head Chef in a comparable position at a 5-star level - Familiar with the requirements of HACCP standards - Puts the wishes of the guests first and is ready to go the extra mile - Honest personality with integrity who likes to work in a team - No hierarchical thinking - Willingness to help out in other areas of the Lodge in exceptional situations - Annual Bonus based on company results and individual performance - ZAR 1,600 contribution to Private Health Insurance (after probation period of 3 months) - Pension Plan with 7.5% company contribution of fix salary (after probation period of 3 months) - Accommodation (own room & bathroom) - Gratuities - Uniform - Meals - Free wifi - Working cycle: 6 weeks of continuous work / 2 weeks off, 10 days of annual leave
